Here’s our menu for the upcoming week. Tomorrow we celebrate one year in the marriage covenant together! As such, we are having a special meal of filet mignon our grocery store was running an awesome deal on it last week — Providence! :D)
Oatmeal (this recipe)
Leftovers or Sandwiches, fruit
Filet Mignon, baked potatoes, veggies
Chili Frito Pie, veggie, rolls
Cheesy Baked Grits, veggie, biscuits
Hamburger Pasta Skillet , veggie, rolls
Our Sabbath dinner isn’t finalized yet, though. I’m thinking of some kind of recipe using the flounder I have in the freezer, along with a veggie and bread. Emma has already asked to make peanut-butter cookies for the dessert 🙂
Hamburger Vegetable Soup
Beef & Black Bean Taco Bake
Fruit with peanut butter dip
Fruit, nuts, smooth, cheese
Chicken salad in whole wheat pitas
Crockpot Chili (Using my friend Megan’s recipe)
Broccoli & Cheese Soup (from What to Expect: Eating Well When You’re Expecting)
Snacks will include: fruit (apples and oranges), applesauce, celery sticks, carrots, and maybe a smoothie here and there .
It’s just Josh and me this month (the girls are in Ohio for their month long visit with their father and family there) so I’m not quite sure how long these recipes and left-overs will last just the two of us. Only time will tell! 🙂

Since I probably won’t have much time this weekend, as it is Memorial Day weekend, my brother is coming into town, and a local festival is taking place, I did my menu planning for next week last night. Next week is a short week for me, and Josh is coming up next weekend! *grin* I am so excited to see him! It’s been since January!!
Anyway … menu planning. We always keep breakfasts and lunches very simple since we don’t have a lot of time in the morning and none of us are home for lunch.
Breakfast – Eggs, toast
Lunch & Dinner – We will most likely be at my parents having some kind of cook out.
L -Regular packed lunches
D- Sunshine Casserole, salad
B- Toast, smoothies
L- Emma pizza day, Me and Ry – regular lunches.
D– leftovers (maybe) or grilled cheese, salad.
L– regular stuff
D- Panko Mozzarella Sticks (I’m going to try to bake these instead of fry) and Mac & Cheese, and salad.
B– Mini Chili Frittata
L- Grilled cheese/ Or some other sandwich with fruit
D- Lime & Cilantro Chicken, salad.
B – undecided … maybe cereal, oatmeal, smoothies.
L- Grilled cheese/ Or some other sandwich with sliced apples and cream cheese dip
D – Lef overs depending on amount left (we need enough for all day Sunday) or 7 Layers Tacos
Leftovers all three meals.
